What does Ethiopian Sidamo taste like?
Look for a fragrant cup with bright acidity and layered sweetness. Common tasting notes include citrus, stone fruit, berries, jasmine and black tea. These are tasting impressions rather than added flavours, and your brewing method, water and grind will all influence what you notice.
How should you brew Ethiopian Sidamo?
A pour-over is a great first choice because it highlights the coffee’s aroma and clarity. Start with a medium-fine grind, a water temperature around 92–96°C, and a brew ratio of 1 gram of coffee to 16 grams of water. For a 300g brew, try 19g of coffee. Pour enough water to wet the grounds, wait around 30–45 seconds, then continue with slow, steady pours.
If the cup tastes sharp or thin, use a slightly finer grind or a little hotter water. If it tastes dry or overly bitter, grind a little coarser or reduce the brewing time. Small changes are usually more useful than changing everything at once.
Whole bean or ground?
Whole beans keep their aroma for longer, so grind just before brewing if you can. A burr grinder will give you a more even grind and make it easier to adjust the flavour. If you buy pre-ground coffee, keep it sealed, cool and away from direct sunlight, and use it while it is at its freshest.
